One should always have a backup of the Virtual Machine Package just like backing up any of the important work one has created they don't want to loose however the issue you have is not a Fusion issue per-se. In other words Windows Update is a part of Microsoft Windows and it has nothing to do with Fusion. You need to troubleshoot this just as if it were a physical machine running Windows which mean turning to Microsoft's resources for support with their product to find out how to clear up an issue with Microsoft Updates not functioning properly.
