First, sorry, I'm not a Linux person but need to install / run something that requires a Linux VM. I picked Ubuntu Server latest version (20.04) which I was able to install from the ISO image. Now, I"m trying to install the VMware tools without much luck.
The Reinstall tools menu item is disabled and following the instructions here - VMware Knowledge Base I was able to mount a CD volume but the referenced directory/files didn't exist.
Any pointers for a amateur on how get this done?

I wouldn't bother.
Just install open-vm-tools with apt and you're done.
Most of VMware Tools is open source and distributed with the various linux distributions.

after installing a VM with Ubuntu 20.0.4 on vCenter 7.1 I can see the VMWARE TOOLS installed automatically without any action from my side , the same happened with my while I was installing the RedHat 7.5
