Try diabling 3d acceleration.

Shut down windows.

Go to virtual machine > settings > display

disable acceleration.

Now try launching any office apps in windows

Since you have only 4GB of RAM installed to begin with, how much of it is being assigned to the Win 8 virtual machine? In BootCamp, Windows gets it all, but in Fusion, Mountain Lion needs some, Fusion needs some, and Windows 8 needs some. Microsoft says 1GB is all that's necessary for 32 bit and 2GB for 64 bit but I have to wonder if they're being a bit optimistic.
