I've heard conflicting reports... I think upgrades might work but new-installs fail... We're looking into it now actually.
I've upgraded to macOS and now my Windows7 VM is throwing the dreaded & descriptive 'Internal Error' message
If anyone wants to use me as a troubleshooting guinea pig, let's do it. I've reinstalled 8.1.1 to no avail.

I don't think it is your bad at all. I just wanted to point out that there are two separate issues:
* Getting VMware Fusion to run on macOS 10.12.
* Getting macOS 10.12 to run in a virtual machine on a Mac that meets current VMware Fusion system requirements (e.g., OS X 10.11).
I bet that many people want to do exactly what you are trying to do - run the new macOS "Sierra" in a safe virtual environment. In fact, I bet that it is what most VMware Fusion users are thinking. Count me in for that, too. It is far too risky for me to run the beta macOS 10.12 on my "production" Mac.
Update: I have fixed this internal error by disabling 3D acceleration in Virtual Machine > Settings... > Display, and uncheck Accelerate 3D graphics.
VM will now boot up without issue.
In that case, I did get macOS Sierra installed in VMware by first creating a new VMware using the El Capitan installer and then running the Sierra installer.

Considering the wording of some of the posts of this thread, I'm not sure this is the right place to post this. I'm trying to make the macOS Sierra Developer Preview run as a virtual machine on VMware Fusion 8.1.1 running in El Capitan. Unfortunately, it doesn't work for me. After the installer app copies its stuff to the virtual disk (cloned from a virtual El Capitan), the virtual machine reboots and is about to start the installation proper, I get constant kernel panics. Any clues? Will there be a more compatible Fusion 8.1.2 in the foreseeable future, or are there any hints as to what can be done for a successful macOS Sierra installation as a virtual machine on Fusion 8.1.1 or 8.2?
According to gdhnz a few posts up, you need to create an El Cap VM and then upgrade it to Sierra.
Looks like there is no way currently to do a fresh install of Sierra in a VM.
Thanks, but, as explained, that's exactly what I did. I didn't try to do a fresh install at all. I had an El Capitan virtual machine, which I cloned, and then I tried to install macOS Sierra on it.
I was able to get it installed, and documented the process here:

It's a bit of work at the command line to get it going, but it works and Tools installs just fine.
I haven't had a ton of sit-down time with it post-installation, but I'm eager to hear about the issues that users run into (once they get past the install).
I noticed off the bat that Siri was a bit clunky, but works if you speak slowly and clearly. It's obviously a bug that we'll be investigating tho.

I'm running Fusion 8.1.1 on a late 2013 MacBook Pro r. Windows 10.
Since updating to from El Capitan to Sierra beta, Fusion starts up to the launch screen (the one with the arrow in the center) but will go no further. Message is "internal error".
See wtfmatt's post above, disable graphics acceleration and the partition should load and run.

I believe that is what most people wanted - how to run the new macOS as a Guest in a VMware Fusion virtual machine.
Is VT-x/EPT support a requirement for successfully running a Sierra virtual machine (with Fusion 8.1.1) on old hardware, such as a Mac Pro 1,1?
