I have at least 60 VMWARE working on Fusion 12.2 PRO and I would like to buy a new MAC M1X machine ARM
How can I be sure that all my VMWARE works ( WIN2003, W2012,W2019,RHEL6,7,8, SUSE ..... )

They won’t.
x86-based guest OSes need an Intel-based Mac.
There is a Tech Preview release of Fusion for M1-based Macs here, all the guest OSes are for ARM: https://communities.vmware.com/t5/Fusion-for-Apple-Silicon-Tech/ct-p/3022
