Fusion Office 2016 slow - Force reboot

Hello All..So I am an IT consultant and have been facing a vexing issue for the last couple years through multiple versions of VMWare fusion and a couple macbooks.  The issue is Office 2016 running under Windows 10 (or even 7) runs fine after boot and outlook launches, etc.  However, after several hours the VM grinds to a crawl to the point where it even can affect the host.  The only solution is to hard shutdown the VMWare fusion guest.  Now we were thinking about 9 months ago that it might be related to the host computer although it seemed like it had enough resources.  So they purchased the highest end spec Macbook 16 available at the time with 64 GB of RAM, highest end process, SSD, etc.  The system cost close to 5K.  So we thought this would help.  However, office 2016 still grinds to a halt forcing a reboot.  We tried all the tricks we have seen in the past about disabling hardware acceleration, etc but it does not help.  There is nothing else running on this VM.

So the customer downloaded Big Sur yesterday and this forced Fusion 12 so they installed fusion 12 pro and this issue still persists.  We have a lot of resources allocated to the VM (Processors, memory, etc) but it still forces a hard boot.  It almost seems like a memory leak but we are not seeing memory exhausted.

Has anyone seen this?  We have been fighting it for about 2 years.
