Crashed hard drive, ran recover software what file type should I look for?

Hard drive crashed, ran Data Rescue which has found many files. what file type should I search for to find the VM Fusion operating system and files for my windows 10 virtual machine?

VMware Fusion can be reinstalled, that shouldn't be an issue.

For the VM's the main files are those that represent the virtual disks, i.e. .vmdk files.

Other files that you want to look for are configuration files like .vmx, .vmxf.
