Question :

When will CentOS 8 be supported by VMware Fusion 11.5+ ?  It is not working now and the Support matrix lists CentOS 7 as newest version supported.

CentOS 8 was released after Fusion 11.5 was released. It may not be officially supported in that release. As to futures, we don't know that and couldn't say even if we did. You may need to wait for the next version.

You've already got your answer (that CentOS 8 is not supported on VMware Fusion 11.5) but I wanted to clarify based on what I found in the release notes.

In short, CentOS 7.5 is the newest supported version of CentOS as of 11.0 and no newer versions are supported as of 11.5.1.  Hopefully it will be supported in a point release and we don't have to wait for a larger release (which would be farther out).

VMware Fusion 11.0 Release Notes (you'll see CentOS 7.5 supported here)

Review all release notes up to 11.5.1 and you won't see any further mention of CentOS.

And it turns out you might be able to ignore the release notes for now, because you can install CentOS 8 with a little workaround:

In short, tell Fusion you're installing Red Hat 8 instead.

(The page I linked to also mentions changing to UEFI but then notes that Legacy BIOS works, too.)
