I can't find Autofit Guest in Fusion. Also, Mac user expect the maximize (green window title button) to perform this kind of operation.
Where is Autofit?
If you install Tools in your VM, the guest will automatically fit to the window whenever it's resized, including via the green Zoom button.

These are VMTN appliances. Is there some best practice for others to include VMware Tools in them. At some point I knew there was a re-distribution restriction on Tools.
Or because the appliances run on multiple platforms it is preferrable to install Tools as step 1?
VMware has changed its licensing policy on the version of VMware Tools for Linux guests so that they can be included in downloadable appliances.

(Such a change would be moot for Windows, for obviou$ rea$on$.)
Anyway, if an appliance doesn't have VMware Tools already in it, I'd certainly go ahead and install them. Most of the stuff in the Tools package is host-independent (or at least plays nice with a variety of hosts). The exceptions are not earth-shattering: there is extra stuff in the version of Tools that comes with ESX Server, for example, but it is unused in VMs running on hosted platforms such as Workstation or Fusion.
Are the tools for Linux more flexible regarding kernel version? Do you still need to re-compile the tools for different Linux kernel builds (like minor kernel updates, one for single proc, one for SMP, etc.), or are you guys working in user mode now?

We do still need kernel modules in the guest, for our custom drivers like networking, memory management, etc.
The Tools come with pre-compiled kernel modules for most popular Linux distributions now, but if you have a custom kernel or a very new/very old distribution, you'll still have to run vmware-config.pl to build the modules at install time.
