macOS Big Sur VM is possible to enable GPU accelerator if it's running on Big Sur host.
VMware Tool 11.2 or later should be installed. And following two parameters should be updated in the .vmx file
appleGPU0.present = "TRUE"
svga.present = "FALSE"
You can see the following in the system report after reboot the VM
Chipset Model: Apple Paravirtualized Graphics Device
Type: GPU
VRAM (Total): 27 MB
Vendor: Apple (0x106b)
Device ID: 0xeeee
Revision ID: 0x0000
Metal Family: Supported, Metal GPUFamily macOS 1
