Hi:
Everything was working fine until I allowed my Mac to install update to Catalina 10.15.5
After restart Fusion starts but it get's stuck trying to open any VM and consumes 100% of the Mac CPU.
Any ideas?

Sounds like we might have been in the same boat. Give this a read: All Linux guest VMs hang immediately after Fusion 11.5.5 upgrade
TLDR: remove / add all security settings (that you are allowed to remove / add) for VMware Fusion. That's what solved my problem. Hope that helps.
