Does Fusion 1.1.2 work with 64 bit Vista installed on BootCamp partitions now that Apple has release a Vista 64 bit Bootcamp update. (Boot Camp Update 2.1 for Windows Vista 64) ?

No, or at least not any differently than 1.1.1 did. 64-bit Vista support is somewhat involved, and 1.1.2 is a maintenance release aimed at specific problems with 1.1.1.

Will Fusion 2.0 address this issue?

The current 2.0 beta does not. VMware policy is that I can't comment on unannounced features, so I can't say whether the final version will.
