An unsatisfactory answer is that (assuming Tools is installed) resizing the virtual machine window will cause the guest resolution to change, so you could carefully resize the window to be 1280x720 (you could have a template picture in the background to make this easier). Unfortunately, even though you could use an Applescript to do this, the automated way doesn't seem to trigger a resolution change.
