If you are asking how to configure vCO to talk to multiple vCloud Director clouds, then simply go to this link:

http://www.vcoteam.info/learn-vco/vmware-kb-tv-how-to-install-and-configure-vmware-vcenter-orchestra...

And repeat steps 6-8 as needed for each of your vCloud Directors clouds.

If you are asking how to setup multiple vCO Clients to connect to a single vCO Server, then just install the vCO client on each of the workstations you wish to develop from, then when you launch the client, specify the vCO server and appropriate credentials. We do not recommend concurrent vCO clients connecting to the same vCO server though.

Is there any official docs from VMware which says concurrent vCO clients connecting to the same vCO server is not recommended? This is very important to us as this scenario consititute an important test case for us. Thanks.

The vCO client is primarily a workflow developer tool rather than an operator tool.  For manual workflow execution other than during development/testing, the recommended approach is through the standard Web Operator (browser) or a custom portal (using your own technology or a product like VMware Wavemaker) and invoking workflows via SOAP.
