is there a way to get performance data like sar do on a "normal" linux host on my vmware hosts (esx servers)? In my vmware infrastructure hosts there is only esxtop available...

You may want to look into the performance tab in the virtual infrastructure client. Also there are many third party tools availible to give you more performance stats. Esxtop is really usefull for troubleshooting. Also check out this document. http://www.vmware.com/pdf/vi_performance_tuning.pdf
sar type of utilities will not give you results that you're most likely looking for, e.g. thouse including virtual machine numbers. With those, you'd get info on just the amount of resource used by your service console. Take a look at the VI toolkit if you would like to script out performance stats. The new powershell toolkit is awesome, and can get the stats. As already stated, the performance tab in vc does a fairly good job in performance reporting as well.
