How can I tell if paravirtualization is working?
I checked the box to enable it in the virtual machine properties. When I started the server 2008 vm, it tried to find a driver for a new memory controller and could not find one.
Is there something else I need to do to get this working?

Paravirtualization doesn't work for Windows. It's ONLY for specially modified versions of some guest OS, there are only a couple I know about, and they are both Linux. windows there aren't any so you should not be using the paravirtualization feature, because it won't work with Windows.
For drivers, VMware Tools are a first way to do paravirtualization.
But for real paravirtualization OS must use some special API, and Windows doesn't support VMI (like Linux).
Windows (Vista and 2008) has some proprietary API to do paravirtualization (Microsoft call it enlightenment), but at this time this API can be use only by Hyper-V (maybe also the next version of XenServer).
