Where can I locate documentation to understand the meaning of the values returned by esxtop on an ESXi 3.3 server?
I noticed they change between different versions of ESXi.

Use the Online documentation at http://pubs.vmware.com/vi35u2/wwhelp/wwhimpl/js/html/wwhelp.htm and search for esxtop. You will find some results like "Memory Panel", "Network Panel", "Storage Panel" and others which describe the values.
