Where do we get licensing details for VMware products with some configuration examples etc.?

The best resource is the Pricing and Packaging whitepaper that details each editions features and benefits and provides example costings (in dollars) : http://www.vmware.com/files/pdf/vi_pricing3.pdf
For correct pricing you are best finding a localized reseller and obtaining a quote from them.

First thing is are you looking for fresh licenses or do want to know what licenses have what features. If you are looking for buying new licenses then you can contact the VMware support team or can send an email to support@vmware.com. If you want to know what each license options are available then below are the details.
-- VI Foundation : Features provided ( VMFS, Virtual SMP , VC Agent , VMware Update Manager , VCB)
-- VI Standard : Features provided in VI foundation + VMware HA
-- VI Enterprise : Features provided in VI standard + VMware Vmotion , VMware Storage Vmotion and VMware DRS
-- ESX server 3i ( VMFS , VMware DRS)
For VC license modes are :
-- VirtualCenter Foundation: can manageupto three ESX servers
-- VirtualCenter: Limit is max hosts per VC.

I would also contact a VMware Authorized Consulatnt (VAC) or VMware directly because they will now all the licensing deals including acceleration kits - bundled license allowing you to quickly deploy vi-3. Also ESXi 3 is free but it provides the same features as ESX assuming you have the apprirate licekses -
