Create a new virtual switch.

Add a new virtual machine port group, configure the VMs and the physical switch to a different network, this wont have any network conflicts.

Hope this answers your question.

Do you want that this network has connectivity to the outside or should it be an internal network within ESXi?

If the latter is true don't assign a physical NIC to that swicth, just create the switch.

On how to add a port group read here: http://pubs.vmware.com/vsp40u1_i/server_config/t_add_a_virtual_machine_port_group.html
