You can use "vmkfstools -X <endsize>" in you COS - vm should be shutdowned for that.
On Esxi use the "unsupported" COS.
You are far better off using the vmware converter and cloning the server to a new vm with the larger disk size.
Totally agee. Using Converter is the way to go. Here is the admin guide if you have not seen it.
