when i create a VM in the vcenter, i have 32 GB of RAM.

ESX can do memory overcommit and also use swap disk space to "extend" the RAM.

But the performance could be very bad if you have more vRAM than then the real one.

Can you please elaborate what exactly your requirement is??

If you have 4 GB Phyical memory in ESX ,in Vcenter server you will see 4 GB memory in configuration tab. Any how you can assign more memory to VM, depend on the memory reservation

If in ESX you have 4 GB phyical memory ,then Vcenter server you will have 4 GB phyical memory (which has system memory+Service Console memory +Virtual machine memory).

When you create a VM ,you can assign memory to a VM ,more than Phyical memory (if you are not providing memory reservation). Options

Hope this doc would be helpful for you:
