I tried to backup the entire ESX but it's taking extremely long. Do I need to backup the entire ESX in order to perform a restore/ DR? If not, which path/ folder can be excluded from the backup?

It's really easiest to just back up the VM's. You can easily just build a new ESX server and then restore the VM's to it.
