We've got two hosts that are currently connected to a fibre chanel HP EVA. We're decommissioning that one
and moving to iSCSI SAN. Currently we've got SC and Vmotion running on a vSwitch over a 192.168 address.
From what I can tell iSCSI uses the SC for discovery of targets. What's the best way to migrate to
a routable VMKernal? Can I just add a new VMkernal that has a routable address or do I need to change
the existing configuration?
I would suggest you separate iscsi from others by creating another vSwitch, service console & vmkernel for iscsi.

You can add a 2nd vmkernel interface, but only if it is on a separate segment than the vmkernel that already exists. You can not have two vmkernel interfaces on the same subnet on an ESX host. I would separate iSCSI to its own interface as well, and not route that network. Keep it local. You don't need that network accessible by other networks, just solely within the network to make sure the traffic on that network is only for storage.

Hello,
I would read the blogs from the Virtualizaiton Bookshelf listed under Specific Blogs which cover this in great detail.
