Logging Disc and Network I/O on ESX Servers

Is there to log disc and network I/O from the physical ESX Server to/from our iscsi san, which has all our vms on it?

You'll find some information using the Performance Tab of your ESX-Server. It'll be more advanced with vSphere4.
