Post'er alluded to it earlier. To delete a vmfs, use fdisk, and delete the partition. Then run esxcfg-rescan vmhba<0|1|2>
This will remove the vmfs and make sure it does not show up on a rescan.

Hi ferdis, if you want to reformat a VMFS volume from the CLI, you'd have to use the vmkfstools command and potentially fdisk if you wanted to shuffle around your partitions.
