The best way to do that would be to, power down the VM and do a migration from your VC. While your going thru the questions, it asks you if you want to move it to a different LUN, here you want to do that so it can change all the required files names to the new name you want. Now if you need it back to the previous LUN just do the same steps without changing the VM name.

Actually Mike, Thats how I've changed all my VM's names to the new naming convention our company required. Its pretty simple but its time consuming when migrating back and forth. Thats the only down side to this.

Mike, IM SORRY, I forgot to put 1 step in first. Rename your VM to the server name you want then do my steps, LOL Sorry brother, I just did it in my environment and was telling myself, "Why can't Mike do it, Its soooo simple, Look I'm doing it now and its working just like I stated" And just realized that I renamed the VM to the name I wanted FIRST. zzzzzzzzzzzzzz A little late working.
