I have a FC SAN with FC, SAS. Which disks should I use for best performance?

SAS=15K
What is the best size vmdk datastore? I currently have 2 750gb each LUN has 8 disks in RAID 5.
Also I just got 2 new servers that are going to repleace old VMware esx 3.5 hosts. I know how to get my vm's out and into my new vm environment but what about my VC server this is virutalized as well on DAS.
It depends. All other things being equal, use the SAS disks.
If, however, you can allocate 30 FC disks instead of over 4 SAS, disks, I would say go FC, for example.
For size - shoot for 10-12 VMs per LUN is the general agreement. Most people have LUNs between 250-750GB.

It is going to come to performance v capacity and required IO.
SAS 15K disks should give you some great performance but size your
Raid groups and Luns to suit your environment.
As disk IO and shares are managed per host it would be good to plan
out what workloads will run together and what requires dedicated disk.
i.e. exchange or SQL may benefit from dedicated LUN's on a dedicated
RAID Group.
As previously stated 10 - 12 VM's work well but look at the requirement of
the workload.
Placing a VM with low IO with a High IO VM will enable you
to balance your environment.
