If you have ESX licensing that includes VCB (for example Enterprise) you can setup VMware Consolidated Backup (VCB) to backup your VM's.
I have download the evalution copy.
Whith the evaluation copy, you can use the consolidated backup framework. It's a commandline based backup utility to take full backups of virtual machines. To restore an image you need the converter.
I recommend you to evaluate the VMware VirtualCenter as well. You will find there an option to create a vm-image which you can use to deploy additional vm images.
PS: you can copy/paste a vm by using the command line on the vm server as well.
