Does anyone know of a tool that would record the text activity of a guest console in vCenter? We are looking at doing a file system check prior to boot on our Linux hosts, recording the data and alerting if the fsck reports errors?

Yes, but that should be done via a syslog, not a VM function. Google syslog for Linux.
That's how you do it.
We do a shutdown -F (force fsck). Only problem is the file system is not mounted so you can't write to syslog.

You can centralize the reporting of Linux logs. You can't do it from a VM console window.
The Linux system is not mounted yet so the Linux OS is not running so there is not a syslog daemon to collect anything from the fsck check...

So if you aren't using the Linux and they aren't connected YET then obviously reporting on errors for a system that is not yet operational is a moot point, now isn't it? Once you get it going, and you have connectivity, setup the servers to report, then you can record the data and alert if necessary...... That's my point.
