ESX Server Replacement

I'm going to replace server hardware running ESX3.5. My question is what happens to datastores added to a SAN LUN if they were added from the server that is being replaced. Will other ESX servers be able to still access the datastore or does vCenter manage that?

Yes. VMFS signature contains SAN vendor ID and LUN ID, and all the host that see same SAN and same LUN ID will be able to use it instantly.
