You'll at least want to do the critical and security patches. This thread discusses some ways to automate the process.

I would also only download the patches that are relevant to your system.

Example being if there was a patch for AMD procs and you have intel there would be no point installing this patch.

Also when you have worked out what patches you want to install make sure you install them in date order.

As mentioned only download patches that apply to your environment. So if there is a critical patch for AMD processors and you use Intel the patch is not critical to you.
