Decrease the size of the VMDK on initial install

I have a VM I'm installing and it automatically balloons to 120 Gigs on install, is there a way to restrict it so that it grows with the data?

You can create a thinly provisioned vmdk from the esx command line (not from the VIC), biut they are not technically supported.

I was searching the web to get to the same goal and the question popped up "Why not use VMWare Converter to do a V2V with pretty much the same config but smaller HD (or vmdk)!?"...
