Any Issues With VCenter Updated Without Updating Hosts

Will there be any sort of conflict if I update VCenter, but do not update the ESX hosts right away? i.e. Will everything operate correctly if VCenter is on 2.5 update 5, but the ESX hosts are running 3.5 update 3? Thanks.

You will be fine. It is best practice to update vCenter first and then the hosts when possible. In the meanwhile things should run just fine for you
