ESX 2.11 migration to VI3

Greetings, I am looking for ideas on the best methods to upgrade two ESX 2.11 servers and one 2.5.X ESX server (no VC) to a ESX 3.0.1 with virtual center 2.0.1 server group.

The ESX 2 servers are all HP Dl380 G3's with Intel Xeon CPUs and all local disk storage--no san connectivity.

The ESX 3 servers are HP BL465 blades with AMD CPUs with EVA SAN connectivity (both vmotion and high availability will be in use).

Obviously the Vmotion upgrade is out of the question for the 2.5 as the cpus are not compatible. I have a gigabit backbone between all servers and the capability to throw up a NFS server if needed, but don't think I will be able to get san connectivity on the esx2 boxes.

My thoughts are moving the esx2 vms to a NFS then using importing them into the VI3 groups. Is this really an option? I need to start on this next week and downtime needs to be kept to a minimum on several systems.
