Is it possible to RAID (1) a couple PCIe SSD's on ESXi 5.1

I know you can do this in software on RHEL and also in Windows.

Is there a way to do this on an ESXi 5.1 Server?

No, there is no way to software RAID from within ESXi.

RAID 1 - definitely not. A sort-of RAID 0 can be done (datastore with extents), but nothing more. Use a hardware RAID controller for that.
