We are looking at implementing VMware vSphere Essentials Plus running to ESXi hosts one a HP DL380 G6 and the other a newer HP DL380 G7 server.
They have different CPU's. The G6 has Intel E5540 Xeon Quad Core 2.53Ghz CPUs and the new G7 has E5630 Xeon Quad Core 2.53Ghz CPUs.
Am I likely to run into compatibility issues when using v-motion etc to migrate guests between hosts with different CPUs?

CPUs are compatible in the following EVC Cluster Baseline:
Intel® Xeon® | Intel® Xeon® | Intel® Xeon® |
Check the below matrix for your refrence, note that you need to enable EVC prior to powering on VMs on the hosts.
