There is no default you pick which one you need, what you pick is what is available to the horizon client.

I didn't think there was a default, but going through practice questions I saw one question that caught my attention that was asking for a default protocol.

What its probably mentioning is the option to set a default protocol for the desktop pool. If you allow users to change the protocol you need to set a default, but if you don't let them pick a protocol the default option isn't needed.
