change the VM settings in the pool

I need to change the Windows 10  timeout settings in the pool. Should I update the snapshot and runs refresh or do I need to recompose the VMs?

Anytime you need to update you need to recompose , a refresh just resets a clone to the last snapshot that was used from a recompose.

I have another question in the pool I make the settings delete or refresh the machine on logoff to never. should I set it to refresh or delete?

That's depends on your use case. If you want persistent desktops leave it never, that means every change is saved when the logoff. Refresh on logoff resets it to the snapshot of when from the last compose, so that works in non persistent situations and is a bit quicker then deleting. Delete on logoff deletes everything except the persistent disk if you have one setup, or anything redirected outside of the vm. As linked clones go away( they were deprecated it 7.10 I think) and everyone moves to instant clones at some point the refresh vs delete on logoff won't be much of a difference since its so quick.
