It depends on what you're rolling out with, but for most cases probably not. If you're using RDP with win7->win7 then the multi-monitor feature built into the RDP7 protocol is available, otherwise no. If not, the View client has the ability to span the RDP connection across multiple monitors but they'll be seen as a single screen from an application perspective, there are third party utilities which will help work around that but I'm not too familiar with them myself.
