How do you set desktop to Maintenance mode or remove Desktop? Could not find anything like Set-DesktopMaintenance or Remove-DesktopVM.

Unfortunately you can't:

That is from the Integration Guide that compares what you can do in View Admin Oprations to PowerCLI Cmdlets.  Notice that there is no PowerCLI to set maintenance mode.
