In document of upgrade you have how upgrade agents. You need upgrade agent in gold image and recompose pool with this new agent installed into gold image, or you too can upgrade agent into gold image, and in all desktops too but manually.

As an elaboration, when you do the upgrade following the documentation, which doesn't really say what will happen to your pools, they do in fact, remain exactly the same and all your settings remain as well.
As a precaution they have you document all your settings, which is a good idea (I took screen shots) so you can easily recreate them but I had no problems.
