I have started the evaluation for VMView and I am at the point where I am provisioning Desktops for our window 7 pool. The first desktop is stuck in the customization stage asking for a reboot. It looks like where it is creating the persistent disk How can I get around this?

Looks like you have logged into the desktop before the customization was completed. Please wait untill the customization is complete and if you see customization is failing, please let us know the error message that you see in the View Administrator Console.

I did not log into the machine, I just opened the Console to see what it was doing. I was using the quickprep customization on a blank install of Windows 7 with the most recent updates. What I actually did to get around this was to actually use the Customization templates to create a customization profile for the windows 7 machines with our MAK key and everything in it. When deploying that way, it actually get past this part and reboots the machine automatically and does not get hung up.
The original problem still exists: Using quickprep hangs during provisioning during that step
But this way is probably better anyway.

I think your issue is that using MAK keys just dosen't work when doing imaging like this..... If you are also going to deploy Office 2010 you also are going to need to use a KMS server. We have found zero issues after using a KMS server. It is easy to setup and to manage.
