I was able to do this by adding the new vCenter server to View Administrator. You will need to build a new Composer server as composer requires a one to one relationship with vCenter. Using your existing Composer server can cause database conflict, plus any recomposes using a new vCenter server and an already allocated Composer server will fail. With the new vCenter and composer servers added, you can create new desktop pools utilizing the new vCenter server. Works like a charm.
Since you have to choose the vCenter server when creating a pool, and since there doesn't appear to be a way to alter that setting in the pool properties, I'm not familiar with a way to migrate your existing desktop pools. I'm interested to see if someone knows an alternative way.
