Same question here. I left the default (Remove Windows Store Applications) and selected Photos to keep and it didn't work.
Also, rolling back the optimization did not restore the apps.
Suppose the only other choice is to select "Keep all Windows Store Applications" and then select the one(s) you want keep but I'd like to confirm how it's supposed to work before trying again since rolling back won't undo it.
***UPDATE***
Selecting "Keep all Windows Store Applications" isn't the way to do it. I just realized that selecting this option disables the ability to then select individual apps.
Would also like to do the following:
Keep Thumbnails & Preview Pane in File Explorer Enabled
Increase "Turn Screen Off After" from 15min to 60min
Leave Settings Under Personalization > Colors Unlocked
Was able to figure out how to fix these post-optimization on previous images but it would be cool to configure these in the optimization instead. I realize this is not exactly related but hoping anyone familiar enough with the OSOT to answer the store apps question might know the best way to track down these settings as well. Not having much luck using search to find the related optimizations.
