How to Clean Corrupt Profiles when using AppVolume Writeable Volumes

How do we access contents of user profiles that exist within dismounted write disks?

Did VMware eliminate our old trusted ability of eradicating corrupt components of user profiles?

With appvolumes and its mount-only-upon-user-login write disks, IT staff can no longer get into profiles when users are not logged in, to repair them.  Or can they?  Sometimes we need to reverse damage done by spyware/viruses; other times we might need to delete a TileLayer database to restore functionality of a Start Menu, or any other manual correction that requires elevated admin rights.

How do you surgically correct profile issues without wiping the entire write disk; forcing users to have to re-customize their entire environment?
