I read that you can redirect folders like 'My Documents' to a network share using GPO. Can I re-direct it to the VM's 😧 drive like 'D:\My Documents' instead?
I'm creating a VM using 2 vmdk - one for C: and the other for D:. When it comes to backup solution, I just need to back up the 😧 drive's vmdk file. If C: is corrupted, I just need to copy C: drive's vmdk to the user's VM, and then make some changes.

You should be able to point the redirection to any location, as long as the path exists. As long as your GPO only applies to the VM machines (I'd suggest using the loopback policy for this case) for the users, this should be fine. In case you are looking for it the settings are in:

Why not point their profile folders (My Docs, Desktop, etc.) to home folders on a NAS/SAN/file server? Then just backup the home folders. You can still create new C: drives from your snapshot and forget the 😧 drive entirely.
