This might sound like a strange request when talking about a virtual desktop solution. But I want to deploy thin clients into a school but each classroom is licensed for different products, so I need to try and assign the thin clients to the same VDI session each time. If I cannot do this I could get into a situation when a classroom has run out of licenses for a product because users not in that lession are utilising the product elsewhere.

How are your users logging in? You an assign it based on user right now. For instance, I have a bunch of exam rooms and to do what you are talking about I created a user for each exam room.
We currently have 1000 users each with their own username and password
and 300 PC. So let's say the 30Pc's in classroom1 are the only PCs
with Office loaded, but all 1000 students are allowed to run office,
currently they'd need to be in room1 to do this.
Therefore without assigning the thin clients in room1 to the 30 VDI
sessions running office I'd need a lot more Office license to be sure
to always have 30 available.

Are you using zero clients? If so I know how you could pull this off.
We haven't bought the clients yet so if using Zero Clients will do it
that's great.

For those interested what you can do to pull this off is setup multiple VCS servers. Then using the PCoIP MC, you can statically assign terminals to a specific VCS server. On the second VCS server you could setup a pool that points to the VMs that have Office on it. You could still allow all 1000 students to access these workstations, however this pool of workstations will only show up on these terminals because these terminals are controlled by a separate VCS server. It's not perfect, but it would work.
