U can use VMware worksation 6.5 for hosting exchange setup.but there are some issues founfd while installing exchange 2007 on Vmware products especially while installing on child domain.

Also microsoft does not give any kind support if it's application is hosted on Vmware product.:(

You can run each product as a VM.

I suggest to use 1 VM for DC+DNS, 1 VM for CAS, HUB, Transport role, 1 VM for Edge role, and (if needed) 1 VM for client.

In a lab Exchange could be or 64 bit or also 32 bit.

If you want to test the Edge Role you need a different VM.

I suggest to use a different VM for DC/DNS cause you can have trouble in a shared environment.

The client VM could also be your PC.

You can almost run all of your Exchange 2007 in two VMs, 1 VM that runs both AD, DNS, CAS/HUB/Mailboxes role and you can optionally use Unified Messaging if you have PBX systems in place which I assume not. You could use Edge Transport on a different VM but can be configured on the HUB itself which its an optional components you really don't have to have to test out Exchange 2007. You can use VMware Server 2.0 on your PC and its free or VMware Workstation 6.5 which I like more due to many features that is convenient in a lab environment. You can also configured Exchange 2007 cluster services with local iSCSI shared disks as well. You need at least 3-4GB of RAM to test this out effectively.
