I am hoping for some suggestions on how best to set up my VM environment on a small budget.
I am currently considering buying a decent spec server and using it as a host which holds a few VMs with local data storage. I find that a SAN seems to be out of my budget. I will also purchase a 2nd server with similar spec and run a backup overnight, from 1st server to the 2nd . If a disaster occurs, I can boot up the machines on the 2nd server as the will have the previous days backup.
I don’t need v motion or HA. All I would like is to have a reliable setup with reliable backup even if it is not the most up to date backup (night before backup).
Does this seem like the best solution for such a budget or can anyone recommend another solution?

This solution can work, but be sure to buy a good RAID controller with a good cache.
About backup and VM replication you can consider to buy (if you have some budget for it) the Veeam Bundle (there is a specific bundle for vSphere Essential).

agreed with above, a good raid card with cache is definitely must have. there after it would be vmware vsphere essential and essential bundle from veeam backup or quest's vranger ..
