Exchange 2007 HUB/CAS system reqs?

We are combining roles on the Exchange Hub/Cas servers, we need to account for more processor (cores) and memory per server to satisfy both roles requirements. We initially anticipated 4 cores and 8 GB of memory for medium utilization (supporting 3000 users) and ran into some performance issues using OWA, our backend Exchange servers are remaining physical. We also wanted to ensure that a single VM server can handle the load of 3000 Outlook 2007 users if one went down for maintenance of such. Does anyone know how many vCPU and RAM that we should setup for these two HUB/CAS servers on our cluster to hadle 3000 users?

We have six DL580G4 's with four dual core proccessors in each with 64gigs of RAM also in each. Each host is backended to a EVA 8400 and each ESX server will have LUN's that will be on 146gig drives at 15k RPM speeds.

Here is a good article that talks about sizing the various roles for Exchange 2007:

Do you currently have these roles as physical servers? If so, you can use tools to analyze the current usage so that you don't oversize the virtual machines. VMware partners can run VMware Capacity Planner against your current environment to get an idea of current utilization of the servers. You can also use perfmon to gather some of the same statistics but you'll need to do the analysis yourself.

You'll also need to consider memory requirements for each of the Exchange 2007 roles. Here is another good article that discusses all of the requirements:
